100% Castelão
A rare sparkling expression of Castelão from Portugal’s Tejo regio — made as a Pétillant Naturel and bottled with its natural lees.
Sourced from hillside vineyards at Quinta da Ribeirinha, set in a transitional zone between Atlantic and inland Portugal, the site combines warm days with notably cooler nights—preserving acidity and aromatic precision essential for sparkling wine.
Harvested by hand in early August, the grapes were picked specifically for sparkling production—capturing freshness and natural acidity at lower ripeness. Planted on clay-limestone soils, the vineyards naturally regulate water while adding tension, salinity, and structural freshness.
Fermentation began naturally with indigenous yeasts. Before completion, the wine was bottled unfiltered, allowing fermentation to finish in bottle—creating its sparkle and preserving fine lees for texture and energy.
Raw, lively, and unpolished in the best sense—this is sparkling wine driven by process, not formula.

A naturally sparkling wine bottled before primary fermentation is complete. The remaining sugars finish fermenting in bottle, creating carbonation without added yeast or sugar. Often unfiltered, with natural lees present.
Only about 3,000 bottles were made.
