Why Onyx Coffee Lab?
At Wine Stop, we approach coffee much the same way we approach wine: as an agricultural product shaped by place, variety, processing and the decisions of the people who make it.
Founded in Arkansas in 2012, Onyx Coffee Lab has become known for combining exceptional sourcing and precise roasting with an unusually high level of transparency. They tell you where the coffee comes from, how it was processed and what was paid for it. Most importantly, the quality and character come through in the cup.
We carry Onyx because these are not simply coffees made to taste “strong” or familiar. Each one has been carefully constructed to deliver a particular experience. Monarch and Tropical Weather show two very different sides of what coffee can be.
Monarch
Dark Chocolate · Molasses · Red Wine · Dried Berries
Monarch is Onyx’s most developed roast, created for those who enjoy a richer, darker and more traditional style of coffee—but without the burnt or smoky flavors that often come with dark roasting.
It is dense, velvety and almost syrupy, with bittersweet chocolate, molasses, dark berry fruit and a red-wine-like lift. Powerful enough to hold its character in a cappuccino or latte, but balanced and complex enough to drink as espresso or brewed coffee.
Our take: A deeply satisfying coffee with real weight and structure. Bold, chocolatey and comforting, but far more polished than an ordinary dark roast.
Tropical Weather
Mixed Berries · Sweet Tea · Raw Honey · Plum
Tropical Weather brings together washed and naturally processed Ethiopian coffees. The washed component contributes clarity, florals and a juicy texture, while the naturally processed coffee adds ripe fruit and sweetness.
The result is bright and aromatic, with mixed berries, ripe plum, raw honey and the gently tannic sweetness of iced tea. It is a light roast, but not a thin or disappearing one—the fruit is expressive, the sweetness is generous and the finish is wonderfully refreshing.
Our take: Coffee for people who want to discover how colorful coffee can taste. Juicy, floral and fruit-driven, with enough sweetness and body to remain inviting rather than overly sharp.
